    • Our chef John Allred to compete on the world stage
      • Osteria del Toro’s chef John Allred is no flash in the pan, he’s so good in fact that he’s been invited to compete on the world stage at the 56th Concurso Internacional de Paella Valenciana (Valencia International Paella Competition) this September. Allred will be the only New Zealander among 30 contestants from across the globe competing for the title of the ‘World’s Best Paella Chef’ on the 11th of September in Sueca, Valencia, Spain. Following success at the Pacific semi-finals held in Tasmania earlier this year, Allred says it is an honour to be representing New Zealand doing something he loves. Allred, who has been cooking paella for more than 15 years, says “Valencia is where paella originated from, and I am so grateful to be invited to cook there.” He says there are some differences in his methods of cooking but is looking forward to cooking the ‘Spanish way’, “their style remains very true to tradition, where most people on this side of world cook over a gas flame, in Valencia, you must cook over a wood fire.” Perhaps his 14-year-old son Michael will help take the title of world champ. He will be joining Allred in Valencia—as rules state each contestant is permitted to have one assistant. Allred says his son Michael has shown a keen interest in cooking since a very young age and is really working on improving his paella cooking skills. “We fly out on Father’s Day, so I think that’s a pretty good omen,” Allred says. Concurso Internacional de Paella Valenciana began in 1968 as part of the annual Fiesta del Arroz (The Rice Festival).     • Recipe: Roast Portobello mushroom and kale risotto
      •   Chef John Allred shares a family favourite, a wholesome comfort food for the cooler months Roast Portobello mushroom and kale risotto Yields: 4 portions Ingredients 320  gr       Arborio rice 35  gr         garlic, peeled and minced finely 120  gr       onion, peeled and cut into fine dice 150  ml      olive oil (or 60 gr butter) 150  gr      Portobello mushroom 80  gr        curly kale leaves 2  sprigs   fresh thyme, chopped 6 cm         Rosemary, leaves striped & finely chopped 1.2  litre    chicken stock or vege stock 80 gr      Parmesan finely grated Salt & pepper to taste Optional 60  gr    butter, chilled cut into cubes 40  gr    cream, whipped to soft peak Method Roast the Portobello mushroom in preheated 180 C with 50 ml olive oil, salt & pepper and thyme for approx 7 mins or until the moisture starts to come to the surface of the mushroom. Remove from the oven, cool slightly then cut into 1 cm thick strips. Reserve together with any juice from the roasting process Roughly chop the kale leaves. Sauté 10 gr of minced garlic in 30 ml of olive oil with kale over low heat for 4 mins then add 200 ml of stock. Simmer for 10 mins until kale is softened. For the risotto sauté the onion with 50 ml of olive oil over low heat without colour until soft. Add the Arborio rice & 25 gr garlic; cook for 2-3 mins until the garlic loses the initial “raw” smell. Add the remainder of the stock bring to boil and cook for 15 mins. Stirring if required to prevent sticking Add the kale leaves, prepared mushroom and chopped rosemary; continue to cook until the rice is just firm to the bite and adjust the stock level to ensure the risotto is “loose” like a thin porridge To finish the risotto stir in the Parmesan and correct the seasoning Optional: stir in the cold butter and whipped cream at the end of the process which will result in a richer risotto/correcting the seasoning as required.           The post Recipe: Roast Portobello mushroom and kale risotto appeared first on Osteria del Toro.

      • Head Chef John Allred shares a deliciously simple recipe from our Wellington restaurant to impress your friends and family. (Serves four people) Ingredients 350 -400 gr Clams, washed and free from sand (available at Moore Wilson’s) 2-3 ea cloves of garlic, crushed 3 tbl olive oil 1 tbl chopped Italian parsley ¼ cup dry fino sherry Method Sauté the garlic in olive oil without colour then add the clams and sherry. Place lid on pot then cook over high heat until clams open, discarding the shells that don’t open Add parsley and toss Serve in bowls with crusty bread to mop up all the delicious juices.
